Tickle Your Tastebuds during National Nutrition Month®

March is National Nutrition Month® and our Health Promotion department will be bringing you some delicious, exotic and easy recipes for you to try!

Today it's a healthy Peruvian Chicken Soup, or “aguadito de pollo” in Spanish, perfect for a cold day. 

Like chicken noodle soup, Peruvian Chicken Soup is also a great treat to make for someone who is sick, because it is warm, the chicken broth soothes the throat, and it is packed with nutrients that help your immune system. 

 

Ingredients (Serves 8)

4 skinless, boneless chicken breast halves, cut in half                                             1 cup peas

Salt and pepper, to taste                                                                                        1 cup corn

½ cup olive oil                                                                                                         1 red bell pepper, chopped

1 medium onion, chopped                                                                                      10 cups chicken broth

1 tsp minced garlic                                                                                                  4 sweet potatoes, cut in half

1 tsp seeded, minced serrano chili                                                                          1 cup uncooked brown rice

½ cup chopped cilantro

 

Instructions

1.       Season the chicken with salt and pepper. 

2.       Heat the olive oil in a large, heavy pot over medium-high heat.  Stir in the onion, garlic, and serrano chili; cook until the onion has softened, about 1 minute. 

3.       Add the chicken and continue to cook for 5 minutes.

4.       Stir in the cilantro, peas, corn, and red pepper; cook for 1 minute.

5.       Pour in the chicken broth, potatoes, and rice. 

6.       Bring to a boil, then reduce heat to medium-low, and simmer until the chicken is opaque and the potatoes are tender, about 40 minutes. Serve with warm bread.
